Meet Chef Enrique and begin a Fun Cooking day with a visit to one of the Town Markets and to the "Tortilla Factory" to get the fresh dough to hand make our own corn tortillas.

At the market you will also learn about the spices, chiles and the different produces cultivated in the area and how to pick them. Your Master Chef will also share about the social, historical and cultural facts of the Mexican Foods.

The hands-on cooking class takes place in Chef Enrique's home; he and his Family are happy to welcome you for an authentic "Mi Casa es su Casa Cooking Experience". Cook, Learn, Have Fun, Eat and Enjoy of an Authentic Feast !!

ü The food markets we visit are not fancy, these are the places where local vendors sell indigenous produces and where the natives find the original flavors.
ü All the dishes are cooked from scratch during the class, with fresh ingredients bought the same morning during the market tour.
ü We will always be happy to add a second recipe to the meal of the day.
ü We pay special attention to hygiene and we observe high cleanliness standards. We purify all vegetables, water and ice.
ü Vegetarians, Vegans, Gluten and Dairy Free are more than welcome.

Monday: Mexican Swine Taco Feast


We open our week with the two most famous Mexican Tacos: Al Pastor and Carnitas.

You will learn how to cook and season these flavorful recipes at home and at least 4 different Salsas and Guacamole. We will also make Queso Fundido with Chorizo and Chicharrón en Salsa Verde. Tortillas are a must and we wil make a lot for our Tacos. Like in the Taquería.

Tuesday: Mole and Tamales (our Mom’s recipes)


Let’s cook from scratch Mole Poblano like a Mexican family would do on a Fiesta Day. You will learn how to blend all the chiles, chocolate and more than 25 ingredientes in a fine Mole Sauce. We will also make Tamales, Salsas, Guacamole and Home Made Tortillas.

Wednesday: Chiles Rellenos and Sea Food Day


We will go to the Fish Market to select the catch of the day to make Ceviche, Salsas, Tortillas and Chiles Poblanos Rellenos with Sea Food, Mexican Pacific Style.

Thursday: Mexican Barbacoa ( Chicken- Beef or Lamb –Chef’s choice)


Barbacoa is a millenary cooking technique from our México and one of the most exquisite dishes you can cook; a favorite recipe on weddings in the rural Mexico. You will learn how to make the Adobo sauce for the meat as well as the Salsas and Garnish. This cooking day will lead you through the millenary technique of cooking in under ground pits like the Aztecs and the Mayans used to cook. You will also learn to cook the salsas that make this dish so special and a favorite of the Mexican people. (Lamb Barbacoa and undergroundpit pit will be available on October 19, 2017 )

Friday: Pozole (like our abuela)


Eating Pozole is a ritual in México. On this class you will learn to make the finest of Mexico: “Pozole Verde”.

To accomplish this recipe we will make a Mole Verde Sauce from Pumpkin seeds and tomatillo and also Jalapeños rellenos and Flautas and of course the Salsas that we enjoy so much. A true Mexican Feast.

ABOUT THE COOKING CLASS
Runs: Monday thru Friday.
Duration: 5 hours.
PRICE ADULT $85 USD - KIDS PRICE (ages 7 to 14) $65USD
INCLUDES: Guided tour of the town market (in English with a Mexican accent); bottles of water, soft drinks, all ingredients, cooking class for a full Mexican meal: hand made tortillas, salsas and guacamole, side dishes or soup and a main course ; transportation back to the meeting point.
Meeting time and place (by reservation): 10:00 am at the Starbucks coffee located inside Galerias Vallarta-Liverpool shopping mall.
Private Classes, Corporate Groups and Team Building classes are available upon request.

Reservations can be made within 90 days or 24 hrs up to the day before the cooking class (subject to availability)

CANCELLATION POLICIES
Our cooking class takes place rain or shine. Cancellations made up to 48 hours before the cooking class will receive a 50% refund. All cancelations within less than 48 hours and no-shows will not be refunded. In the event that you need to reschedule the date of your cooking class, please let us know at least 48 hrs before. Rescheduling of the cooking class is subject to availability- a refund will not be provided.
In case we have to cancel your cooking class due to unforeseen circumstances we will provide a full refund.
