Monday: Mexican Swine Taco Feast
We open our week with the two most famous Mexican Tacos: Al Pastor and Carnitas.
You will learn how to cook and season these flavorful recipes at home and at least 4 different Salsas and Guacamole. We will also make Queso Fundido with Chorizo and Chicharrón en Salsa Verde. Tortillas are a must and we wil make a lot for our Tacos. Like in the Taquería.
Tuesday: Mole and Tamales (our Mom’s recipes)
Let’s cook from scratch Mole Poblano like a Mexican family would do on a Fiesta Day. You will learn how to blend all the chiles, chocolate and more than 25 ingredientes in a fine Mole Sauce. We will also make Tamales, Salsas, Guacamole and Home Made Tortillas.
Thursday: Mexican Barbacoa ( Chicken- Beef or Lamb –Chef’s choice)
Barbacoa is a millenary cooking technique from our México and one of the most exquisite dishes you can cook; a favorite recipe on weddings in the rural Mexico. You will learn how to make the Adobo sauce for the meat as well as the Salsas and Garnish. This cooking day will lead you through the millenary technique of cooking in under ground pits like the Aztecs and the Mayans used to cook. You will also learn to cook the salsas that make this dish so special and a favorite of the Mexican people. (Lamb Barbacoa and undergroundpit pit will be available on October 19, 2017 )
Friday: Pozole (like our abuela)
Eating Pozole is a ritual in México. On this class you will learn to make the finest of Mexico: “Pozole Verde”.
To accomplish this recipe we will make a Mole Verde Sauce from Pumpkin seeds and tomatillo and also Jalapeños rellenos and Flautas and of course the Salsas that we enjoy so much. A true Mexican Feast.
